In our 4th and final installment of the Local Feed we give out some great ingredient substitutions to help you veganize your meals. Cashew cream, which we gave out the recipe for in Week 2, can substitute dairy-based cream in any recipe. Nutritional yeast is a great ingredient to add a cheesy taste to dishes like vegan Mac and Cheese. You can find the recipe on our website, VeganGR.com

Another quick meal is Pasta Alfredo. We make a healthy and delicious alfredo sauce out of cauliflower. You won't believe how good this is until you try it.

Cauliflower Alfredo Sauce

  • 1 head cauliflower, florets trimmed
  • 1/4 to 3/4 cup almond milk
  • 1 t dried basil 2 T olive oil
  • 2 cloves garlic salt and pepper
  1. Boil cauliflower until tender and drain.
  2. Add cauliflower to blender along with 1/4 cup of almond milk, olive oil, garlic, and salt. Puree, adding more milk as necessary for the right consistency. You want this to be processed until it’s silky smooth with no lumps.
  3. Pour sauce into a pan and add the pepper and basil. Stir to combine. Bring sauce back up to boiling and serve.

Toss with veggies for a complete meal.
